My recipe for plain chocolate cake is adapted from my mother's recipe for the basic fruit cake. I have simply replaced the dried fruit with some drinking chocolate.
Ingredients
- 1 cup butter
- 1 cup sugar
- 3 1/2 cups plain flour
- 5 eggs
- 3/4 cups milk
- 4 tbsp brandy (preferably French cognac)
- 4 tbsp drinking chocolate (I love Cadbury!)
- 4 tsp baking powder
- a few drops of vanilla
Directions
- Preheat the oven to 180 degrees C (350 F)
- Grease a baking tin.
- Mix the butter and the sugar in a food processor or electric mixer.
- Add the eggs one by one.
- Add the brandy and the vanilla.
- Add the milk and the drinking chocolate.
- Add the flour combined with the baking powder.
- The mixture should be a soft, dropping consistency.
- Pour the mixture into the cake tin, smooth the surface of the cake and pop it onto the middle shelf of the oven.
- Cook for 40 - 45 minutes or till the cake is well risen and golden brown. Do not open the door before 20 minutes have elapsed or else the cake will fall flat!
- Carefully remove the cake from the tin on a cooling rack and let it cool for about an hour.
- Then serve with tea, coffee or hot chocolate and enjoy!
