Living on a Mediterranean island, fish is included in my diet at least twice a week. This recipe consists of few ingredients, it's very easy to make, it's healthy and most importantly it's truly delicious! The fish must be fresh, though - not frozen.
Ingredients (serves 4)
- 4 seabreams (tsipoura) about 400 gr each
- 3 tablespoons of virgin olive oil
- oregano and thyme
- salt and pepper
- 1 lemon cut into quarters
- the juice of 2 lemons
Directions
- Ask your fishmonger to scale and gut the fish.
- Thoroughly wash and drain, then put 2 quarters of lemon in the cavity. Let it rest for 30 minutes.
- Then remove the lemons, brush the fish with some olive oil and season with oregano, thyme, salt and freshly ground pepper.
- Grill in the grill toaster for about 20 minutes at medium heat (2)
- In the blender mix 3 tablespoons of virgin olive oil and the juice of two lemons and pour it on the fish when you serve it.
- Serve with basmati rice or chips (if you're naughty!), a green salad and a bottle of chilled dry white wine .
In the Philippines surrounded by seas, and here in the US, where the fishing towns are near, fish is always on our menu, and should be ....as much as possible. It looks as it's simple to make ....might try this even with other types of fishes, right? Thanks for sharing.

Oh, your fish looks so delicious! In Japan we don't normally cook fish whole. We remove the head and slice it in fillets. My favorite recipe is marinaded grilled fish. You can use mackerel or bluefish or any other oily fish. You prepare a marinade consisting of soy sauce, sake, mirin, sugar, grated fresh gignger which you bring to a boil, then pour it over the fish fillets. Then you refrigerate the fish (covered) for at least 6 hours. Finally you spray olive oil on both sides and arange it on a hot grill rack, flesh side down, for about 10 minutes and turning once halfway.

I like trying new recipes and yours sounds delicious. I like oily fish. I will definitely try it. By the way, a Greek fish lover will eat the head of the fish first. It's supposed to be the best part.

Tsipoura is one of my most favourite fish. I love it grilled with lemon juice and olive oil but also baked. I wrap it in baking paper together with oregano, onions and peppers in rings, tomato and olive oil and bake it for about 20 minutes.

Hmm, I can see you have become a Master Chef! I generally prefer meat to fish but occasionally, I won't say no to grilled fresh fish. I never eat frozen fish, anyway.
