Ingredients
1/2 pack whole-wheat spaghetti
1 pack (500gr) mixed vegetables (frozen) or any fresh vegetables to your liking cut in small pieces
4 tbsp extra virgin Greek olive oil
1 onion cut in thin rings
2-3 cloves garlic
1/2 cup ouzo
grated halloumi cheese
salt and pepper
Directions
- If you use frozen vegetables, thaw them overnight in the refrigerator.
- Heat the olive oil over medium heat and cook the onions and garlic until wilted.
- Add the vegetables and simmer over low heat for about 15 minutes.
- Stir gently and add the ouzo. Cover the pan and simmer over low heat for 10 minutes. Add salt and pepper
- Boil the whole-wheat spaghetti al dente (5-6 minutes)
- Strain and add it to the vegetables.
- Mix and serve with grated halloumi cheese
This sounds like a great healthy meal. I'm sure my kids will love this but I don't think they will like brown spaghetti. I'll try it with normal spaghetti. I think it will be just as delicious.

You can replace halloumi with parmesan or mizithra. Halloumi, however, gives this kind of spaghetti a very special flavour. Enjoy your meal.

Buonasera Anastasia. You know that my country is very famous for all kind of pasta which I cook it 2-3 times a week. I have a recipe which it is like your. I make spaghetti with vegetables, garlic, tomato sauce, white wine and fresh cream. But is the first time I hear this greek spaghetti. I will try to do it. I only hope to find halloumi cheese and ouzo in my town.

This is one of the best Greek recipes you've posted! Everyone in my family loves pasta and I'm sure they will like this amazing Greek spaghetti. I'll only remove the garlic because my son doesn't like it at all. Have a very good night.

Oh how I love pasta and halloumi!! Cooking spaghetti is a practical and fast idea for dinner when I come home from work. But the recipes I know are very fattening. They have lots of fresh cream and cheeses. Definitely, your suggestion sounds much healthier. I've bookmarked the recipe to give it a try on Friday night.
