KOURABIEDES -
( Traditional Greek Christmas Cookies)
My Mum's Recipe:
INGREDIENTS
2 teacups butter
2 egg yolks
3 teacups flour
1 teacup icing sugar
1 teaspoon baking powder
1/2 teacup brandy preferably Metaxas
1/2 teaspoon baking soda
1 teacup almonds chopped and roasted
some rose water
DIRECTIONS
1. Let the butter soften and cream it for 15 minutes, until it begins to turn white.
2. Add the egg yolks, the baking soda, the baking powder, the almonds, the Metaxas brandy and , finally, gradually add the flour until you have a dough that is neither too soft nor too tough.
3. Let the dough stand for an hour in a warm place covered by a towel.
4. Next with small amounts of dough, shape round rectangular, crescent or round cookies.
5. Arrange them on a buttered pan and bake in a medium oven for 15-20 minutes.
6. After removing the kourabiedes from the oven, sprinkle them with rose water.
7.Finally, once they're cold, sift plenty of icing sugar over them.
